It's the same as a turkey crown, but for a duck: https://www.cooksinfo.com/turkey-crown Basically, it's probably the duck without its wings or legs and possibly also without some other part of its undercarriage. Definitions vary. The crown is a cut of poultry you can sometimes find available in supermarkets. In the UK you'll find lots of turkey crowns for sale at Christmas for people who aren't feeding enough people to want the whole turkey. It refers to the cut of the meat rather than the cooking style (you probably would roast a duck crown, but you don't have to). It is probably fundamentally the breasts of the bird, but still attached to the rib cage. |
